Breakfast Burrito

When I first started my business  mornings were calm and relaxing. I now realize making elaborate meals that require extra time  is a luxury I no longer have- a blessing and curse. Now a days, I jump up and find myself having 20 mins or less to get out of the door. Knowing this I started finding and creating breakfast ideas that were quick to make and travel friendly. The Breakfast burrito fits both of these requirements and it is delicious!!! Get the deets below:

Ingredients

  • 3/4 cup of egg whites
  • Big handful of spinach
  • 1 oz grated mozzarella almond cheese (purchased at whole foods)
  • Dried basil
  • salt & pepper
  • La Tortilla Factory large tortilla

 Directions

Stir cheese into Egg whites. Spray the skillet with cooking spray, and heat the skillet over a medium heat. Reduce heat to low and add egg white and cheese mix, spinach, and salt & pepper scrambling until cooked through, about 3 minutes.

Spread the scramble on 1 Tortilla. Roll up burrito-style and serve.

You can spice this meal up by cooking peppers & onions and adding it to the scramble,  then place avocado and salsa in the tortilla.
